This exciting wine is made from the Listan Blanco variety, otherwise known as Palomino Fino in Jerez, Spain where it is used for the production of Sherry.
The grapes come from pre-phylloxera, ungrafted 100 year-old pergola-trained vines which are planted at 460 meters or 1,500 feet above sea level. The wine was fermented and aged in stainless steel allowing the crisp acidity and salty minerality to shine. It's a very refreshing and dry wine that would be really delicious with a plate of fresh raw oysters.
