2019 Raventos i Blanc de Nit Rose Cava, Penedes, Spain (750ml)
This is probably our favorite sparkling offering from Raventos i Blanc as it shows well the terroir of this storied estate in a delicate, balanced way. It is a blend of 42% Macabeo, 37% Xarel.lo, 14% Parellada, the traditional Cava varieties, plus 7% Monastrell (or Mourvedre) which is what gives the wine its pretty pale pink color.
Raventos i Blanc is one of the oldest and most historically important wine estates in Spain. The Raventos family has been growing wine continuously for 20 generations in Sant Sadurni d'Anoia, Penedes since 1497. In 1872, Josep Raventos Fatjo created the first Champagne method sparkling wine in Spain with his estate's Xarel-lo, Macabeo and Parellada grapes. Josep-Maria Raventos I Blanc founded the modern day winery in 1984 that has been at the forefront of high quality, low production (versus the majority of producers in Penedes) Cava. All of the estate vineyards are farmed organically and biodynamically, another rare feat for the region.
